A healthy and delicious chicken soup for quick weeknight dinners. So good, you’d never guess it takes fewer than 10 minutes to make.

Last month we did a January salad series, and that worked out so well I figure we will keep up the themed months, at least until it stops being fun. Coming into cold and chilly February, I thought, what better than a month of soups? So every week until March we’ll have a new soup or stew or chowder, starting with, drum roll please… the World’s Easiest Chicken Taco Soup.
If you drew a graph where x was hard to easy and y was ick to delicious, this soup would hanging pretty in that top right hand corner (something gross and hard to make would be down in the bottom left). Does that make sense?
I always trot out that graph metaphor when I describe this soup to people and am usually met with blank stares, but I can’t help it. I feel like I need graphics to explain just how easy and amazing this soup is! To make it, you literally open a few cans, toss in some chicken, heat and eat. It might just be magic.

And lest you hear canned food and think this soup must be packed full of salt and high in calories, think again! Make sure your chicken broth and beans are low-sodium, and you are good. Even with a healthy dollop of sour cream and handful of cheese, this soup still comes in at under 400 calories. You can’t complain about that!

This is my go-to soup for crazy week nights and potlucks when I know time is going to be tight. It’s a total crowd-pleaser and you cannot imagine how many people ask for this recipe and are shocked when they hear how simple it is. Seriously, give it a try. You won’t regret it.

Ingredients
- ▢ Breast meat from a rotisserie chicken shredded*, about 12 oz
- ▢ 4 cups low-sodium chicken broth 2 14oz cans
- ▢ 1 15-ounce can black beans drained and rinsed
- ▢ 1 8.75-ounce can corn drained
- ▢ 1 10-ounce can green enchilada sauce
- ▢ 1 14.5-ounce can diced tomatoes with green chilies
Toppings
- ▢ 5 tablespoons sour cream
- ▢ 1 1/4 cup shredded sharp cheddar cheese
- ▢ Green onions thinly sliced, optional
- ▢ Fritos or tortilla chips crushed (optional)
Instructions
- Dump everything together in a large pot.
- Heat.
- Dish.
- Mix in cheese and sour cream.
- Eat.

Cookiefied versions of “Star Wars: The Force Awakens’” best character: Poe’s Jacket.

Okay guys, I was not going to do another Star Wars recipe after my BB-8 Cupcakes . When I started this blog, I said I’d limit myself to one nerdy recipe per franchise, lest the blog just become all Hannibal recipes all the time (people-free obviously, and I’m saving that one for a special occasion). BUT, I wanted to do a nerdy/pop-culture Valentine’s Day treat and once this idea popped into my head, it refused to leave. So here you go: Poe’s Jacket Cookies.
Why are these my Valentine’s Day treats? Because, was there a purer expression of love and friendship in all of pop-culture this year than the sharing of Poe’s jacket? I think not. The movie might as well be called Star Wars: Siblinghood of the Travelling Jacket for all that thing gets passed around by our three heroes. AND IT’S BEAUTIFUL!!

The jacket starts off the film with the best pilot in the Resistance, who passes it off to the universe’s most adorable stormtrooper, who then loans it out to our favorite young Jedi, who then gives it back to our newly minted Resistance member, where it, SPOILER probably helps save his life. And each time it’s handed off, it’s given in the spirit of friendship and affection. I love it so much, I might just cry. And if that jacket doesn’t get repaired and make it into the sequel, I really will.
I made these cookies with the recipe from my Copycat Heart Cookies with Cinnamon Icing , minus the food coloring. If you want to see me rave over how delicious they are, click over to that post. Just trust me when I say they’re really, really good, but you can use whatever cutout cookie dough you like best (or store-bought to make things simple). I do recommend using the cinnamon icing I link to though, because the cinnamon is what gives the coat the great, slightly distressed leather look, no coloring needed!

In case you want to use these as valentines or party favors, I created some printables to go with the cookies. You can print them out on sticker paper or just use double-stick tape like I did. (Click on each one for a large version.)

And before we move on to the instructions, I’ll tell you now, these cookies are a bit of a labor of love. They are easy to make, BUT they require a few resting periods, so they are not quick cookies. Don’t start these at 8pm on Valentine’s Day eve or the morning of a party. There will be tears. With that dire warning out of the way, on to the instructions!

Ingredients
Cookies
- ▢ 18 sweater-shaped sugar cookies cooled - I used my Copycat Heart Cookies dough
- ▢ 1 batch of my Cinnamon Icing without food coloring
- ▢ 2-3 cups royal icing made thick* - I used a double batch of Cake Wiz’s Royal Icing
- ▢ Red, yellow, green, and black food coloring
You Will Also Need
- ▢ Piping bags
- ▢ A coupler and #2 tip
Instructions
Icing
- Cover cookies by dipping them in the cinnamon icing. Use a knife to scrape off the excess and clean up the edges. Set aside to harden.
- Separate royal icing into three bowls. 1/4 in two of them and 1/2 in the third. In one of the small bowls, make black icing. In the other small, make the maroon. I used mostly red with a couple drops of yellow and green. In the largest, make your brown icing. I used about 57 drops of red, 45 green, and 11 yellow.
- Stir and check the consistency of your icing. You want 15-second icing, which means, if you run a knife through it, it takes about 15 seconds to fill back in. If it is too thick, add a little water to it in 1/4-teaspoon increments. If it becomes too thin, stir in a little sifted powdered sugar.
- If your cookies are firm enough to handle without smudging the base icing, you can begin piping. Otherwise, cover the royal icing and wait.
Piping
- Fill your piping bag with the brown icing and pipe on the jacket details.
- Switch to maroon and do the breast line and shoulder patch. I used a toothpick to spread the icing around and get into the corners.
- Finally, switch to black and do the accents and fill in the shirt. Again, using a toothpick for the corners if needed.
Rest
- Allow to dry for at least four hours before stacking or packing. The royal icing will dry quickly, but the base icing needs a few hours, or it will dent and smear.

I have another Valentine’s Day recipe for you today. So far in this category this year, I’ve made Heart Cookies with Cinnamon Icing and Poe’s Jacket Star Wars Cookies , but those are treats for boring old human beings. Today I’m sharing treats for our most adorable valentines, our pets!
I have a bad habit of feeding my pets people food. My cats like popcorn and pineapple off of pizza, my dog lives for table scraps, and my horse’s favorite treats are sour patch kids, but I know those aren’t exactly good for them.
I feel much better about giving them something that is made with all-natural ingredients and isn’t full of oil and sugar. And that’s how these Carrot Oat Applesauce Treats came into being.

These treats are super easy to make, use ingredients you probably already have on hand, and whip up in about 10 minutes before going in the oven. The resulting treats are solid and easily portable, but slightly gummy so it gives pets something to chew on.
Ella sat in the entry way to the kitchen then entire time they were being made, just waiting for them to be done. Okay, she does that any time I cook anything in the kitchen, but she was extra excited about these. I know it.
When it came time for taste testing, they were a hit. Ella gobbled hers down and Daff was searching my pockets for more (BTW, horse people, these treats won’t fall apart in your coat pockets!!).

The cats weren’t terribly impressed, but they’re cats. There’s just no pleasing them.

Carrot Oat Applesauce Treats for Dogs and Horses
Ingredients
- 1/2 cup oats (quick for dogs, quick, steel-cut or old-fashioned are fine for horses)
- 1/2 cup unsweetened applesauce
- 1/2 cup (about 1 large) carrot finely grated
- 1/2 cup all-purpose flour
Instructions
- Preheat the oven to 350 degrees and cover a baking tray with parchment paper or a silicone baking mat.
- Mix all four ingredients in a medium bowl.
- Use a tablespoon to drop clumps of the mixture on to the baking tray. Shape if you wish.*
- Bake for 18-20 minutes, until treats are set.
