Happy 2017! How was your New Years Eve?

Did you watch the Sherlock season 4 premiere yesterday? Oh man. Rough. (And you know I love this show–I made Sherlock cookies last year!)

We’re back for another year of recipes, and as is tradition, recipes on the blog this month will be on the lighter side. You might remember last January’s salad series where I posted some of my favorite healthy salads like my BLT Salad and Asian Chicken Salad (if you haven’t tried those salads, you totally should–they are THE BEST).

This year I don’t I have any January salads for you, but I do have lots of my favorite healthy dinners and lighter desserts scheduled that I can’t wait to share.

Things may as well be delicious while we all recover from the smorgasbord that was December.

First up is my favorite Panda Express Copycat recipe around, String Bean Chicken. I know. I know. You hear fast food-inspired and do not think light and healthy, but this String Bean Chicken is made with lean and light boneless skinless chicken breast and packed full of green beans and bell peppers.

It’s a cinch to throw together and SO good. My sister introduced me to this recipe a few years ago, and aside from my Teriyaki Chicken , it’s the Asian-inspired recipe that I make the most often. Mostly because it’s delicious, but also because everything can be cut and prepped ahead of time, so it’s a perfect weeknight meal.

Chop and mix everything over the weekend, and then day of, just pour the marinade over the chicken in the morning, and that evening, everything cooks up in about 15 minutes.

That means that not only is this Panda Express-style String Bean Chicken that tastes better than takeout, but it’s FASTER too.

My top 10 favorite BakingMischief.com recipe posts of 2016. - 9

It’s the last post of 2016! On Monday, I posted the Top 10 Most Popular Baking Mischief Recipes of 2016. Today, I’m rounding up my favorites. A lot of my favorites were already featured in Monday’s round up, but these are the posts I loved the most that didn’t crack the top 10 list.

My Favorite Posts of 2016

I had more fun creating this Game of Thrones Frey Pie recipe than almost anything else I made this year. It’s the perfect meeting of delicious to eat, gorgeous to look at, and delightful to feed to people. 😉

I’m genuinely disappointed these Pumpkin Donuts with Maple Glaze didn’t really catch on, because they might be my favorite new thing I made this fall. Expect to see me pushing them big time next year when pumpkin time rolls ’round again.

These Cinnamon Apple Crumb Muffins are one of the most devourable things I’ve ever made. You eat one, and it’s so good that there’s a 99% chance you are going back for a second. After the first test batch, I literally had to start boxing up the leftovers and sending them away as soon as they came out of the oven so I wouldn’t eat them all.

It’s Monday! How was your weekend? Did you watch the Golden Globes last night? Did any of your favorites win? I’m an awards show junkie, so I made naan pizza for the occasion (OMG, so good, recipe coming soon) and happily settled in for three hours of beautiful people giving each other awards. I was super excited to see my fav, Olivia Colman get recognized, and oh man, those Viola Davis and Meryl Streep speeches were so great.

Also, Kristen Bell has maybe inspired me to cut my hair into a lob again. Tell me not to do it, people. Talk me down from this ledge!

I realized as I started writing this post that today, in the dead of winter, I’m posting a pasta with a name that basically translates into “spring pasta.” I could say that was intentional and that I’m dreaming of spring, but to be perfectly honest, I love winter (at least my mild SoCal version of it). I’m in no hurry to see spring take its place. I just really love eating this pasta all year round and wanted to share it with you now. 🙂

Up there with other favorites like my Ham and Potato Soup (that recipe just got new photos, have you seen them?), BLT Salad , and Peasant Soup , it’s one the recipes I make most often in my own kitchen, because it’s just a dinner you feel good about eating and making.

This easy Pasta Primavera is all about lots of veggies (okay, tomatoes are a fruit), some lean chicken breast, and a little bit of cheese coming together to make a damn good pasta. I love that it’s easy to make. I love that it’s a bit spicy and just a tiny bit sweet. And I love that it’s a nice and light pasta for those times when I desperately need some carbs in my life.

Are you ready for the Sherlock winter special? We all have the shows we love, possibly beyond reason. Sherlock is one of mine. The problem with loving this show is that it airs a three-episode season and then goes away for YEARS. The delight of loving it is that every time it comes back, it feels like an event. We aren’t even getting three episodes this time around, just a single 90-minute episode, but it’s Sherlock , so it’s cause for celebration.

We’re celebrating around here by making these Sherlock -themed tea bag cookies. The cookie base is my favorite crumbly, buttery shortbread, covered with melted chocolate and adorned with custom tea tags for a perfect Sherlock dessert. As a bonus, I have a fun extra recipe to use up the scraps so nothing goes to waste! (Scroll down to see!)

Panda Express - 49

Ingredients

Cookies

  • ▢ 1 cup ( 8oz ) unsalted butter room temperature
  • ▢ 1/2 cup ( 60g ) powdered sugar sifted
  • ▢ 2 cups ( 280g ) all-purposflour
  • ▢ 1/8 teaspoon salt
  • ▢ 6-8 oz sweetened baking chocolate
  • ▢ Chocolate sprinkles for bonus recipe only

Tags

  • ▢ Thread or twine cut into 12-inch pieces
  • ▢ Double sided tape or glue stick
  • ▢ Printed tea tags downloads available above
  • ▢ Printed tea bag stencil optional

Instructions

Cookies

  • Cover two cookie sheets with parchment paper or silicone baking mat.
  • Cream the butter and sugar. Stir in flour and salt, mixing until just combined. Be sure to scrape the sides and bottom of your bowl.
  • Dump dough onto a sheet of plastic wrap. Wrap and smash into a 1-inch thick disk. Refrigerate for 30 minutes.
  • Roll dough out on a piece of floured parchment paper, to 1/4 inch thick. Make sure to flour the top of the dough before rolling it out, so your rolling pin doesn’t stick.
  • Cut out rectangles of about 1.75 inches x 2.25 inches. A pizza cutter works great for this!
  • Using the stencil or eyeballing it, cut the two top corners off of each cookie, then use a straw to punch a hole in the cookie for the string.
  • Use a spatula to place cookies on a baking tray 1 inch apart. You can squish and re-roll the scraps to make more cookies, or you can save them and make the bonus recipe below.
  • Refrigerate the cut out dough for 15 minutes. This will help them keep their shape in the oven. Preheat oven to 350°F.
  • Bake the cookies for 7-9 minutes until lightly golden. If they have formed any air bubbles while baking, gently (and carefully) pat down while the cookies are still warm. Set aside to cool.
  • Once cookies have cooled, in the microwave, melt chocolate in a mug or other deep container. Start with 30 seconds, stir, and continue to microwave and stir in 15-second increments until melted.
  • Dust any stray crumbs from your first cookie and dip until chocolate covers about half of it. Continue with the remaining cookies. When your chocolate gets low, you can sweep the cookies back and forth in the chocolate to help scoop it up the sides of your cookies so that they look uniform. Place on parchment paper and allow to set.
  • Thread string and cut out tea tags. Using double-stick tape or a glue stick, fold and stick sides of paper together. Trim corners if desired. Serve and enjoy!
