He tells her that his mom always used to make some for him when he wasn’t feeling well, and for a moment, it looks like she’s going to do it, but instead she just throws a phone at him, tells him to call him mom, and leaves him to wallow.
I laugh SO hard, every single time I see that commercial, and I have no idea why, because I’m totally that person who makes soup for sick people. Feeling sick? Here, let me bring you some soup. And if I’m bringing soup, I’m probably bringing this one.
Like my Peasant Chicken Soup , this surprisingly healthy Ham and Potato Soup is another of the early recipes I learned in college. It saw me and my friends through many an illness and late-night study session.
It’s perfect for what ails you because it’s pure comfort food. Ham and potatoes in a bowl? That’s like a hug from the inside.

And the nice thing about this soup is that it’s deceptively easy. Sure it looks gorgeous and complicated, but once you cut the veggies and put them on to boil, all you really have to do is make the roux, stir in the milk, and watch the broth go from clear to creamy and delicious.
Throwing this together for a sick friend or a busy weeknight dinner takes all of a half hour, and when you’re done, the result is the best damn healthy ham and potato soup you’ve ever tried.

I have another Valentine’s Day recipe for you today. So far in this category this year, I’ve made Heart Cookies with Cinnamon Icing and Poe’s Jacket Star Wars Cookies , but those are treats for boring old human beings. Today I’m sharing treats for our most adorable valentines, our pets!
I have a bad habit of feeding my pets people food. My cats like popcorn and pineapple off of pizza, my dog lives for table scraps, and my horse’s favorite treats are sour patch kids, but I know those aren’t exactly good for them.
I feel much better about giving them something that is made with all-natural ingredients and isn’t full of oil and sugar. And that’s how these Carrot Oat Applesauce Treats came into being.

These treats are super easy to make, use ingredients you probably already have on hand, and whip up in about 10 minutes before going in the oven. The resulting treats are solid and easily portable, but slightly gummy so it gives pets something to chew on.
Ella sat in the entry way to the kitchen then entire time they were being made, just waiting for them to be done. Okay, she does that any time I cook anything in the kitchen, but she was extra excited about these. I know it.
When it came time for taste testing, they were a hit. Ella gobbled hers down and Daff was searching my pockets for more (BTW, horse people, these treats won’t fall apart in your coat pockets!!).

The cats weren’t terribly impressed, but they’re cats. There’s just no pleasing them.

Carrot Oat Applesauce Treats for Dogs and Horses
Ingredients
- 1/2 cup oats (quick for dogs, quick, steel-cut or old-fashioned are fine for horses)
- 1/2 cup unsweetened applesauce
- 1/2 cup (about 1 large) carrot finely grated
- 1/2 cup all-purpose flour
Instructions
- Preheat the oven to 350 degrees and cover a baking tray with parchment paper or a silicone baking mat.
- Mix all four ingredients in a medium bowl.
- Use a tablespoon to drop clumps of the mixture on to the baking tray. Shape if you wish.*
- Bake for 18-20 minutes, until treats are set.

I’m totally split. On one hand, it’s a holiday that places undue stress and expectations on people in and out of relationships. On the other hand, it’s a day on which people give me flowers and candy, and it gives me an excuse to make things like Overnight Cinnamon Rolls for Two and maybe my Mini Chocolate Sheet Cake , soooo…
How ever you feel about the day, I have a super quick and easy Valentine’s Day recipe for you that’s too cute to resist: Pink Hot Chocolate with Mason Jar Whipped cream.
How delighted would partners, kids, roommates, Airbnb guests, whomever you are sharing your Valentine’s Day with, be to come into the kitchen and find a cup of this stuff waiting for them?

Making the Pink Hot Chocolate is so fast and easy and the whipped cream uses good old fashioned elbow grease, no mixer necessary. If you have a mason jar, a couple minutes, and a dream, you can make this.
Two notes on the recipe: make sure to use white chocolate you like the taste of by itself. It should go without saying, but this is what your hot chocolate will taste like. I used low-quality chips that I like fine in cookies but would never eat by the handful in one of my first test cups, and the resulting hot chocolate was so gross I nearly scrapped the entire recipe. For the next cup, I used higher quality chocolate and it was amazing. Good chocolate makes all the difference!
And on the whipped cream, depending on your altitude, type of cream, stamina of your shaking arm, the consistency of your finished product may vary from pipeable to spoonable. Either way, it’s delicious! And if you want guaranteed stiff, pipeable whipped cream, you can always whip it the old fashioned way–with an electric mixer. 😉

Ingredients
Whipped Cream
- ▢ Pint-sized mason jar with lid
- ▢ 1/4 cup cold heavy cream
- ▢ 1 1/2 teaspoon granulated sugar
- ▢ Dash of vanilla optional
Pink Hot Chocolate
- ▢ 2 cups milk
- ▢ 4 oz good-quality white chocolate chopped
- ▢ 2-4 drops red food coloring
- ▢ Sprinkles optional
Instructions
Whipped Cream
- Put your mason jar in the freezer for 15 minutes, so it is very cold.
- Pour in cream, sugar, and vanilla.
- Screw on lid and wrap the jar in a towel if it is too cold to hold. Shake vigorously until you no longer hear liquid sloshing inside, about 5-7 minutes. Check the consistency of your whipped cream before setting in the refrigerator while you make your hot chocolate.
Hot Chocolate
- In a small saucepan, heat milk. Add chocolate and stir until completely dissolved and milk reaches desired temperature. Do not allow to boil. Remove from heat and stir in food coloring.
Assemble
- Pour into cups, spoon on whipped cream, and top with sprinkles.
- Enjoy!

Easy and Comforting Ham and Potato Soup
Ingredients
- 3 1/2 cups (about 2 large) russet potatoes, peeled and diced medium
- 1 1/2 cups ( 9 oz) cooked honey ham, diced medium*
- 1/2 cup celery diced small
- 1/2 cup onion diced small
- 4 cups ( 2 15oz cans) chicken broth
- 5 tablespoons butter
- 1/4 cup and 1 tablespoon ( 44 g) all-purpose flour
- 2 cups milk, (any percentage)
- 1/4 teaspoon black pepper
- Salt
Instructions
Boil
- In a large pot, combine potatoes, ham, celery, onions, and chicken broth. Bring to a low boil and cook over medium heat until vegetables are fork-tender, 10 to 15 minutes.
Make the roux
- In a medium saucepan, melt butter over medium heat and whisk in flour. Cook, stirring constantly until flour is golden, about one minute. Slowly add in milk, continuing to stir so that no lumps form and cook until mixture is thick, about 5 minutes.
Combine
- Pour flour and milk mixture into the soup and stir. Add pepper, and salt to taste.
- Serve and enjoy.
